We eat a lot of meat and veggies in my house since my husband started doing a paleo diet a few months ago. My favorite easy veggie dish right now is baked acorn squash in the microwave.
Cut the squash in half and scoop out the seeds. Wrap each half with plastic and place on plate. Cook on high 5 minutes and let stand for 5 minutes, repeat. After 10 minutes of cooking the squash should be soft to the touch but be careful not to burn yourself when checking it. I like it plane and the kids like it with some butter and a little cinnamon and sugar.
Green bean with a little onion and olive oil is always a hit with my family too.0
