low fat mashed potato

    Potatoes and skim/2% milk or low fat sour cream. Can add a little bit of butter. Doesn't get easier than that, obviously it's not as good as the half and half or cream and lots of butter kind though.

    Canned condensed skim milk can give a richer flavor, since it's thicker than plain skim milk. Use a that or reduced fat sour cream or lowfat greek yoghurt (or a mix of those) for a creamy texture that is low fat.

    ETA: If you want to cut calories further, substitute 1/3 to 1/2 of the potatoes with cooked cauliflower and mash all together. Cauliflower has such a delicate flavor you can't taste it over the potatoes.

    You can do half potato and half cauliflower. I've never tried it but I've been told that it's very good and you won't notice the difference.
  • You might try adding chicken stock and/or some green onions and kale or cabbage for a healthy boost :)

    I've heard that if you boil the potatoes and let them sit in the starch water you don't have to add dairy . . . again this is just something I've heard. I recommend earning the right to eat the real thing.
  • I sometimes use buttermilk...gives it a nice sour cream flavor without the calories. I always use butter...gotta have it in real mashed potatoes!

    Use a potato ricer, it makes the mash really fine and totally lump-free so you barely need any milk or butter!

    I liked crushed potatoes (very lightly mashed with a masher) and buttermilk. Add a bulb of roasted garlic for extra flavour. Rub a bulb of garlic with olive oil, and roast for 30 minutes in the oven. Squeeze out the garlic paste from the cloves into the mash.

    ^^ this...and use skim milk and low calorie/low fat spread...like Smart Balance....
