i am all about lazy meals haha.
one thing you can do is based on what you normally buy, like produce meats and grains you like, you can go to myfridgefood.com and check off all ingredients you have and it will find you recipes.

things i like to make are: pierogis topped with salsa and veggies as a side - my favorite side veggie is frozen spinach thawed and drained with garlic oregano a little ricotta and a little marinara or diced tomatoes mixed in. i really could live off this it's sooo good, i reminds me of baked ziti!

tortellini salad - cook up cheese tortellini and toss it with a greek salad (romaine, kalamata olives, roasted red peppers, banana peppers, feta, olive oil red wine vinegar and spices)

pizzadilla - whole grain tortilla spread marinara sauce, shredded mozzarella and veggies or other pizza toppings, cook on the skillet like a quesadilla.

flatout wrap pizzas - the whole grain ones are really good, top with pizza toppings and bake in the oven

stroganoff - i use meatless grounds but you can use ground turkey or other meat, cook that up, boil water and cook egg noodles, and then add to the meat cream of mushroom soup, sliced mushrooms, oregano and garlic, bring that to a light boil and then add sour cream or greek yogurt at the end

mashed sweet potatoes with cinnamon or cut up sweet potatoes and sautee with veggies like spinach and mushrooms and garlic, toss with whole wheat pasta and olive oil and grated parm

stuffed peppers - cook up instant rice or quinoa, mix with ground meat or meatless grounds, season with taco seasoning top with cheese and bake until cheese melted.

stuffed zucchini - cut in half long ways, gut the inside cook the insides with meatless grounds or ground beef or turkey or chicken, season with spices, fill the zucchini and top with marinara and shredded mozzarella and bake until cheese is melted

spaghetti squash - stab the crap out of it, nuke it for 10 minutes. let it cook, slice in half and scoop out guts and then shred the squash out. with that you can toss it with olive oil and spices such as oregano garlic onion powder sage dill weed whatever spices you like, mix in frozen (thawed) mixed veg. top with mashed potatoes and shredded cheese and bake. or you can go an italian route and toss with marinara, ricotta, spices, spinach and broccoli and mushrooms, and top with shredded mozzarella and bake until cheese is melted.

campbells skillet mixes - the green thai one is really good. you can use chicken, add veggies like different colored pepper strips, onions, broccoli, mushrooms and cook in a skillet, add the sauce until it bubbles. eat served over couscous or rice or quinoa, i made it with tofu it was quite good.

slow cookers are awesome if you have one. there's a blog 365 days of slowcooking, where you can even make "freezer dinner" meals by prepping ingredients together in different bags and freezing them, then in the morning or whenever toss it all in and cook on low 6-8 hrs or high 3-4 hours and you have a meal ready. i like to make chili in the slowcooker or soups then i have meals for lunch or dinner. can also get a whole chicken and cook that in slow cooker then freeze portions of it. i used to do something like where i would make a bunch of plain rice, plain pasta, plain quinoa, plain couscous. cook beans in the slow cooker and freeze them (black beans, kidney and chick peas or you can buy canned). and have either fresh veggies prepped and frozen or frozen veg, as well as a protein like cooking a whole chicken and portioning it or having meatless grounds, tofu, seitan etc. then you can throw together a different variety of veggies and protein with a different grain and season it however you want it, makes throwing meals together a little easier.

also a tortilla spread with ranch on it, chicken tossed with buffalo sauce, sprinkle more buffalo sauce on, shredded mozzarella and some mushrooms and spinach or whatever veggies you like. bake in the toaster over, you can eat it as a pizza or turn it into a wrap.
