Sweet potato (or pumpkin) Chocolate chip pancakes.

These are awesome! I've tried them both ways. First, with the pumpkin and then with the sweet potato..and they are both awesome! They're very filling...5 thick pancakes. I reduced the chocolate chips to only 2 Tbsp, and they were still chocolatey enough! Just thought I'd share.

•½ cup cooked sweet potato
•¾ cup milk
•1 egg
•2 tablespoons applesauce (I used homemade applesauce that was sweetened, if using unsweetened, you might want to increase the brown sugar amount)
•½ tablespoon melted coconut oil
•1 teaspoon vanilla extract
•¾ cup oat flour
•¼ cup white whole wheat flour (<-- absolutely love this flour!)
•1 tablespoon brown sugar
•pinch of salt
•½ teaspoon baking soda
•½ teaspoon cinnamon
•¼ cup dark chocolate chips
Instructions
1.Combine all the wet ingredients in a medium bowl and whisk together.
2.Combine all the dry ingredients except the chocolate chips in a large bowl.
3.Add the wet to the dry ingredients and mix until fully incorporated.
4.Fold in the chocolate chips. The batter will be a little thick and might need some “help” pouring.
5.Grease a griddle pan over medium heat and pour the batter to form a pancakes about 5 inches in diameter.
6.Cook for about 2 minutes and then flip and cook about 1 minute on the other side.
Notes *you could substitute pumpkin puree for the sweet potato in this recipe just cut back the milk to ½ cup.
