Favorite Healthy Recipe at the moment

I'm always looking for great healthy recipes. I love to cook for my family! Would you please tell me your favorite healthy meal to prepare is at the moment?
Mine would be, chicken breast stuffed with roasted peppers, mozzarella and pesto, served with spaghetti squash. It is delish, even my teenage boys love it! It's very easy to make!! Please tell me yours, I need some new, fresh ideas!

    I'm loving fish (pretty much any kind) pan-seared in cooking spray with plenty of seasoning, baked hush puppies, and artichokes right now. I also really, really enjoy chicken breasts slow-cooked with butternut squash in a little honey and garam masala, with Brussels sprouts on the side.

    My go to, easy weeknight meal is Roast chicken with roasted roots and cauliflower in some form or another. I spatchcock the chicken then roast it at 400 for an hour, throwing the root veggies in at the 15 minute mark. I baste the chicken every ten minutes in the last 30 of cooking and the skin gets super crispy and delicious! The best part is that I have leftover chicken for salads or sandwiches AND all the bones, the back, and the giblets for chicken bone broth. 4-5 meals out of 1 chicken, how great is that?!?

    Salmon served over roasted tomatoes, hearts of palm, artichokes and spinach.

    I have also started loving curries - I made a butternut tofu curry last week that was amazing.
  • I cooked 4 pounds of ground beef lean with onions and garlic over the weekend. I froze it in one pound portions. This week we have had Korean Beef and Broccoli, Spaghetti, and Chili.
