Healthy Pumpkin Pie Milkshake and Pumpkin Soup

I needed to use up some milk, but you could also use plain yogurt.

1 cup milk
1/2 cup pumpkin puree
1 banana, no skin, cut into chunks
Pumpkin pie spice to taste
Crushed ice

Just blend everything until smooth. I like it as-is with no added sugar or sweetener, but I bet it would taste great with a little raw honey or dark maple syrup. My recipe is about 240 calories total (depending on the size of the banana) and has lots of protein, calcium, fiber, and other nutrients.

I personally love canned pumpkin puree (I buy Farmer's Market brand organic) and it's on sale this season so I stocked up with lots of cans to last me through the year. A favorite savory recipe is a Southwest-style spicy pumpkin soup.

The first recipe is close to how I make it, but I add a big dollop of full-fat sour cream and I don't include beans usually. I'm somewhere between the first and second recipes. Experiment, taste a little as you cook, and find something you like best.
