2 jars Diced Seasoned Tomatoes
1 can Tomato paste (small can)
2 Potatoes
1-1/2 cup Corn
1-1/2 cup Green Beans
1-1/2 cup Peas
1-1/2 cup Cauliflower
1-1/2 cup Broccoli
1/2 cup Mushrooms diced
15- 20 Pearl Onions
10 stalks Asparagus cut to 1"
4 -6 Carrots cut to 1/2"
1 container of Spinach
or
3/4 to 1 lbs Stew Beef
If using Spinach start out with 2 cups of water in pot. Add Spinach and cook until spinach begins to shrink down. If using stew beef, then brown in a skillet.
Add Potatoes, Broccoli, Carrots, and Cauliflower into the large pot with diced tomatoes (do not drain liquid), tomato paste and 2 cups of water (if using spinach you already have your 2 cups). Bring to a low boil for 15 minutes.
Then add all remaining ingredients. You may at this point need to add 1 to 3 cups more water. Cover and allow to come to a low boil for 30-40 minutes.
Season as desired. Usually, I stick with a little salt, pepper, garlic and/or ginger. Be careful with the spinach, if you go that route, and salt. The spinach will absorb the salt quickly.
