I'm not a veggie person, normally, but...

I'm trying to become one. Or at least more of one. I have been challenged to make a healthy side dish tomorrow (yeah, last minute) and I'm wondering if any of you have anything yummy to share. It doesn't have to be a huge amount, there are only three of us. :)

Any help would be very much appreciated.

    look up the recipe for buffalo bites...it is roasted cauliflower with hot sauce and so good!

    Yellow peppers, zuchinni and a big bunch of baby spinach (BIG handfuls just two minutes out - it cooks quickly and shrinks a lot) sauteed in a little olive oil. Or fry a thick slice of bacon and saute some red pepper in the fat and add some green beans and the crumbled bacon just to heat through before serving. Or if you have access to a BBQ or grill, just brush your veg with a little olive oil and seasoning and grill them up - soooooooo yummy! And roasted cauliflower tastes better than french fries, IMO.

    PS: you should always add a little bit of fat to your veg - it helps to absorb more of the nutrients/vitamins, etc. :)

    My favorite side dish, besides stuffing, is green beans!! Easy and yummy!!

    1 pound fresh green beans, washed and cut into bite size pieces
    4 to 6 slices of bacon, chopped
    1 small onion, chopped
    water or chicken broth

    Put bacon in a skillet and start to cook, when partially cooked, add onion. When bacon is cooked and onion is becoming tender, put the green beans in the skillet. Add any spices you want, I add pepper and garlic. Put water or chicken broth in the skillet, (I use water and it is good), so the green beans can steam and nothing will burn. I would reccommend starting with 1 to 2 cups of water or broth. Cover and let steam until green beans are tender. I check them a few times and add additional water if needed. Anyone I have made these for loves them and it is not too expensive!!

    I'm making this for tomorrow! Super yummy and fresh tasting!

    1 can chickpeas, drained and rinsed (or 1 3/4 cups cooked)
    About 1 pint grape tomatoes, halved
    25 large basil leaves, chopped
    3 cloves of garlic, minced
    1 tbsp red wine vinegar (balsamic is yummy, too)
    1 tbsp apple cider vinegar
    Splash lemon juice
    pinch of salt

    Toss everything together and let sit so flavors mingle

    roasted broccoli. take broccoli, toss with olive oil, salt and pepper and roast in the oven around 350 maybe for 20 minutes or so. the last few minutes add some minced garlic to it. simple and freaking delicious. also, mashed sweet potatoes with a little cinnamon is also very tasty.

    Chop raw bacon into bite size pieces. Fry in butter until it gets as brown or crispy as you like it. Add vegetables of your choice (fresh or frozen), like cabbage, asparagus, Brussels sprouts, Broccoli, cauliflower, spinach, etc. Add salt and pepper. Cook until tender as you like it.
