Healthy Delicious Turkey Chili
2 tablespoons extra virgin olive oil
3 garlic cloves, chopped
1/2 small onion, chopped
1 lb ground turkey
1 small red bell pepper, chopped
1 small green bell pepper, chopped
1 (15 ounce) can dark red kidney beans, drained and rinsed
2 (28 ounce) cans crushed tomatoes
2 tablespoons chili powder
1 teaspoon ground pepper
1 teaspoon salt
1 teaspoon cumin
1 teaspoon ground cayenne pepper
1 teaspoon garlic powder
1/3 cup packed light brown sugar
Directions:
1 Add olive oil to bottom of a large cooking pot and turn heat on medium-low.
2 Add garlic to pot and cook until it starts to brown, stirring frequently (about 2 minutes).
3 Add onions and cook on medium-low until golden and translucent (about 5 minutes).
4 Add ground turkey and cook, stirring frequently, until cooked through.
5 Combine seasonings in a small bowl, then pour over cooked turkey meat in pot, and stir.
6 Pour in 2 cans of crushed tomatoes (be careful, it will splash slightly).
7 Stir in light brown sugar, kidney beans, and chopped peppers.
8 Simmer on medium-low heat for 30 minutes with cover on, slightly vented to allow steam to escape.

This too, but make it crunchy peanut butter and chase it with a large ice cold glass of milk. MMM0 -
Not sure if I should be letting this one go so easily :grumble: BUT...
3 medium sized pork steaks (cram 'em in a foil-lined 9x13in baking pan)
3 tablespoons brown sugar (divided by tablespoons)
3 tablespoons low-sodium soy sauce, or, Worchestershire sauce (divided by tablespoons)
3 tablespoons balsalmic vinegar (yep, you guess it - divided by tablespoons)
2 tablespoons unsalted butter, cut into small chunks
Cram the pork steaks into the 9x13 pan. It's ok if they overlap a little bit, but don't stack them on top of each other.
Sprinkle 1 tablespoon of brown sugar over each pork steak.
Sprinkle 1 tablespon of the soy sauce (or Worchestershire) AND 1 tablespoon balsalmic vinegar over each steak.
Dab butter evenly over steaks.
Tightly seal top of pan with foil.
Bake at 350F for 45-50 minutes. Remove foil from top. Bake for 15-20 minutes more.
You won't even need a knife.0 -

2 julienned apples
lightly candied almonds / walnuts / pecans (1 c. almonds, tsp of oil, tsp of sugar, cook until golden)
either goat cheese or bleu cheese
sometimes lettuce
raspberry vinegar
a good quality olive oil.
Sometimes I add the lettuce, sometimes I don't.
When that fails,
Tortilla chips on a plate, salsa, cheddar cheese, microwaved until the cheese melts. Sour cream, if I have it.0 -
Puerco Pibil, as described on the DVD extras for Once Upon A Time In Mexico.
Serve with tortillas and homemade salsa.0
