What do you do wtih turkey leftovers?

I always make a huge turkey and then dice up and freeze the leftover meat. Then it's a quick, easy addition to any recipe and I don't feel like I have to eat nothing but turkey for a week just to try to use it all up.0

I found this recipe and thought about giving it a try with my leftovers:
Broccoli Turkey Salad
1 can (8 oz.) unsweetened pineapple chunks
2 cups torn salad greens
2 cups torn fresh spinach
2 cups broccoli florets
1 green pepper, julienned
1/2 cup thinly sliced red onion
2 cups cooked turkey, cubed
2 tablespoons balsamic vinegar
1/4 cup olive oil
1 tablespoon poppy seeds
1 teaspoon sugar
2 teaspoons dijon mustard
Drain the pineapple, reserving 2 tablespoons juice; set aside (discard remaining juice or save for another use).
In a large bowl, combine the greens, spinach, broccoli, green pepper, onion, turkey and pineapple.
In a small bowl, combine oil, vinegar, poppy seeds, sugar, mustard and reserved pineapple juice. Pour over salad and toss to coat.
Makes 10 servings.0 -
I make the Thanksgiving leftover sandwich that Monica made on a "Friends" episode. Turkey, stuffing, cranberry sauce, green bean casserole and an extra piece of gravy-soaked bread in the middle. My family and friends love it.
Also I found a recipe last year that involved throwing these ingredients plus whatever other Thanksgiving food you prefer into a pie crust and baking it. It was yummy!0 -

Make a large pot of soup and freeze it in portion size containers so you can just take out as much as you need.0

Tonight I put them in a quesadilla. Turkey, shredded cheese, and sauteed poblano peppers. Dipping sauce was a mixture of Sriracha and sour cream. DELICIOUS!0

I loved chicken a la king as a kid. Would do this with leftover turkey if I had some, but don't live in the US.0

Freeze it and use it during the year, there is no rule that says you got to eat it all in the days after thanksgiving.0
