INGREDIENTS:
* 170 g whole-wheat flour
* 50 g wheat bran
* 100 g brown sugar

* 4 eggs ( separated )
* 350 g of plums
* 1 medium apple
* 100 g of berries

PROCEDURE:
Preheat oven to 350F
1. Using electric mixer, beat the egg whites to form a foam (you can add a pinch of salt). Add the sugar bit at a time during the process.
2. Sieve the flour and baking powder in a clean bowl, and add the wheat bran.
3. Add one yolk at a time to the egg whites and whisk till combined. Add the flour to the mixture and fold gently.
4. Wash and dry the fruit. Half the plums and remove the stone. Slice the apple thinly. You may use any fruit ( if using frozen, there's no need to defrost first)
5. Line your baking dish ( metal or glass) with baking paper. Transfer the mixture into it and level it with a spatula.
6. Place the fruit on top without leaving empty spaces. You can sprinkle sliced almonds or shredded coconut on top.
