Canned Pumpkin

I have a few cans of pumpkin. I really want to use them, but in healthy way.

Suggestions?

    My roommate and I always mix canned pumpkin with pumpkin pie spices and pop it in the microwave until warm. I sometimes add some fiber one, granola, nuts, or even some protein powder and have it as a snack! You can also get a spice cake mix and mix one can of pumpkin with one box mix to make muffins. Nothing else goes in the batter and you just bake them at 350F until they pass the 'toothpick test." My mom has made those ever since a friend in weight watchers gave her the recipe 5 years ago, and they are one of my favorite snacks:)

    Stir it into oatmeal, make muffins, add it to risotto (with a little gruyere and cayenne - yum!).

    This! I've also used it as a filling for veggie lasagna or enchiladas.
