Looking for help with side dish ideas other then noodles and potatoes also need help with dessert ideas. Any recipes are apperciated. Thank you

  • Baked or mashed pumpkin (preferably butternut or kent/jap pumpkin). Steamed vegies.

    For dessert, porridge with vanilla whey protein powder, low fat yoghurt or decaf coffee.

    My boyfriend loves a pineapple cheddar casserole that his aunt makes as a side with ham.

    28oz can pineapple chunks (save 3 Tbsp of juice and drain the rest!)
    1.5 cups shredded cheddar cheese
    1 sleeve Ritz crackers (about 25 crackers)
    3Tbsp melted butter
    2 Tbsp of flour

    Lightly grease a 1.5 quart casserole pan, lay in pineapple chunks. Sprinkle flour evenly over pineapple. Sprinkle cheese evenly over top. crush Ritz crackers into crumbs and mix with butter. Spread evenly over the top of casserole. Cover and bake at 350 for 15 minutes. Uncover and bake an additional 10 minutes.

    If you wanted to cut calories a bit more, you could use half the butter and omit the flour. The consistency would be a bit different, but it should still taste awesome.

    And an easy dessert is my favorite cookie recipe.

    1 cup creamy peanut butter
    1 cup sugar
    1 egg
    (optional) 19 Hershey's kisses or Reese's miniature candies.

    Cream together the peanut butter and sugar until creamy. Beat in the egg thoroughly. Measure out cookies with a Tbsp measuring spoon and roll dough into balls. If you don't overload the measuring spoon, you should get 19 cookies exactly. Bake at 350 for 6-8 minutes. When removed from the over, IMMEDIATELY make an x design with a fork. OR if you're not super worried about calories, just push a Hershey's kiss or Reese's miniature cup into the ball to flatten it a bit. Without the candy there's about 100 calories per cookie and with the candy, there's about 150.


    If you just want something sweet and quick, make yourself some oatmeal and add a tsp of vanilla and a Tbsp of cocoa powder with some brown sugar. I also put peanut butter in mine sometimes. I have a recipe somewhere for 100 calorie pumpkin cupcakes with cream cheese frosting. I don't want to take the time to dig it up if you're not interested but send me a message if you want it. I'll gladly go a find it for you. It's pretty delicious. :)

    Fruit crumble with reduced sugar using less flour and using oats and coconut to fill it out.
    Also I like to make pancakes for dessert, but I replace white flour with wholemeal, and reduce the flour replacing with oats and reducing the sugar cos you don't need it and adding banana and berries. Yummy!

    Side dishes are easy, salads or all sorts, quinoa is a super food, Stuffed mushrooms, Stuffed peppers, boiled or poached eggs, homemade egg fried rice with heaps of stirfry veges, steamed veges of all shapes and sizes, mashed potato with no butter just milk, homemade refried beans, home made chili, mashed parsnip and carrots....
