Quick lunch
if you are ever having that potatoe salad craving here is an under 300kcal option and i have entered all the nutritional info into the datbase.
1 cups of diced boiled or baked potatoe
half a cup low fat plain yoghurt
2 teaspoons of whole grain mustard
4 chopped small green salad onions
1/4 cup of canned corn kernels
1 slice of ham (or you could use turkey), chopped
Just mixed the mustard and yogurt in a bowl and then toss through all the ingredients...was filling and worked out to be only 275 kcal.
Was an excellent side with some light grilled sole fillets last night and this afternoon i added the ham and corn to it and it was a wonderful and satisfying lunch.
