What are people's opinions on Caffeine? On the negative - too much and it can increase cortisol levels, but on the positive it can increase metabolic rate.? How much is too much?

IMO, both caffeine and cortisol are smaller pieces that are part of a much larger puzzle. Most people are better served focusing on the bigger pieces (total calorie intake, balanced diet/macros, workout intensity, and sleep) before they worry about the smaller details like these.
But, to your question... IME, people's response/reaction to caffeine can vary greatly. Some people are more sensitive than others, some people are more sensitive to certain caffeine sources than others. IMO, this is all about personal preference (with some common sense).0
