Protein pancakes!
I couldn't find a simple pancake recipe that didn't have cottage cheese and oats (I didn't have any at the time lol) so I came up with my own. They honestly taste like Mcdonalds pancakes but have 28g of protein. My recipe makes about 9 decent sized pancakes so I've got a serving size of 3 pancakes per and the batter stores well in the fridge.
1 cup Robin Hood - Unbleached All Purpose Nutri Flour Blend
1/2 cup vanilla protein powder (I used bodybuilding.com 100% whey vanilla protein powder)
1 large egg
1 1/4 cup skim milk
1 tbsp. baking powder
1 tbsp. Splenda
1 tsp salt
2 tbsp. melted butter or margarine (I used l can't believe it's not butter light)
1 tsp vanilla extract
I serve mine with E.D Smith no sugar added pancake syrup which is 30 cal for 3 tbsp.
