Baked Quinoa

Found this recipe in a kid's book, the broccoli could probably be subbed for whatever add-ins float your boat.

Ingredients:
1 c. raw quinoa
1/2 tsp salt
1 1/2 c broccoli chopped
4 large eggs
1 1/2 c unsweetened soy milk
1/4 tsp black pepper


Steps:
heat oven to 350F
spray pie pan with cooking spray
cook quinoa in 2 cups of water with salt.
remove from heat after 15 minutes of cooking, fluff with fork. Add broccoli and stir gently. Cover again and cook for 5 more minutes
Whisk eggs, soy milk and pepper together in a mixing bowl and set aside
Pour quinoa into pie pan or other prepped dish
Pour egg mixture on top of quinoa
Bake for 45 minutes, cool for 10, cut into slices and enjoy.


Haven't tried this yet, looking forward to trying it this weekend.
