10 lb overnight gain from salt or fatty meat/fish ?

After eating turkey over thanksgiving I was still craving meat ( after being a long term vegan I started occasionally eating meat and fish - a few times in the colder season, most days still vegan) after marrying a Meat loving mongolian 2 years ago, my problem is I crave it now esp if its super cold, but when I do eat it 2-3 things happen: I'm not satisfied ie it never tastes nearly as good as I think it will which just makes me want to find something that will ( though I'm starry to think this mythical meat im craving doesn't even exist and I should just sick to beans and nuts and mushrooms:)! Also it invariably triggers a binge , and I get angry and aggressive and then depressed for a few days --- this time because I ate 红烧肉, 烤鸭, and smoked herring I think it was about 600 kc over but this morning I'm up 10 (10!!!!!!!!!) lbs since yesterday usually if I don't sleep and binge I go up maybe a max of 3 lbs no where near ten has ever happened before is this all salt from the 卤/soy braise maybe the smoked herring had weird smoke flavor additives in additon to enough salt for the next 3 months ?! Anyone have a similar experience with Any of these things ? Sorry fOr the uber long post....
