I haven't tried this yet, but it sounds absolutely DIVINE! And nutritious as well.

Ingredients:
1/2 cup quinoa
2 cups unsweetened soymilk
2 apples, peeled, cored and quartered
2 tablespoons packed light brown sugar
1/2 teaspoon ground cinnamon
1 teaspoon pure vanilla extract

Method:
Place quinoa and 2 cups water in a medium saucepan and bring to a boil. Reduce heat to low, cover and simmer 15 minutes or until quinoa is tender. Drain well. Return quinoa to saucepan and add soymilk, apples, sugar and cinnamon. Bring to a simmer over medium-high heat. Reduce heat to medium and simmer 5 minutes. Transfer mixture to a blender, add vanilla and puree until smooth. Serve hot.

Is it thick? it sounds a lot like atole, if you just added a little chocolate. atole is a cornmeal based hot drink that can vary from savory to sweet. i like the sweet versions.

I found this picture of it called "api de quinoa" in case you wanna search more similar recipes to suit your particular dietary issues...anyone. (there is an accent on the "i" in api that I can't make).
