This delicious salad is keeping me sane while I lose

For those of you who (as I am) are not very veggie-oriented, here is a salad that delivers great taste for not many calories:
• 1 cup baby arugula (more tender, no chopping)
• 1/2 medium honeycrisp apple (seasonal, but the best apple IN THE WORLD) diced
• 1/2 tbsp olive oil
• 1/2 tbsp balsamic vinegar
• sea salt
• fresh-ground black pepper
The last two (as with the oil/vinegar) are to taste. The arugula has a rich, peppery (almost meaty?) taste that is offset by the explosive sweetness of the honeycrisp (important) apple. All told, 107 calories. I eat it with a roasted chicken thigh as a lunch and it is awesome. And I am not a salad guy.
If you want to make the salad more of a meal, you can add a tbsp of soft goat cheese (chevre) distributed through the salad for 80 more calories and a good does of salty/creamy that would satisfy most fat cravings. But honestly, it is pretty damn good w/o the cheese, too.

This sounds good! I love a salad of baby spinach, walnuts, strawberries, avocado and goat cheese, with a basalmic vinegar dressing. Very yummy0
