Salmon Potato Soup

Made this for dinner last night with the leftover salmon from the night before. So good.

4-6 potatoes, peeled and diced
4-8 Cups of water, enough to cover potatoes in the pot
1 onion cut into chunks or 1/2 teaspoon of onion powder
2 bay leaves
2 tbsp parsley
1/2 tsp pepper
1 tsp salt (add more if desired)
Put all these ingredients in a pot and bring to a boil.
Turn the heat down and simmer for 20 minutes. should be able to stick a fork in the potatoes.
Then add a can of salmon (or in our case we used about half a filet that was left over from the night before and kind of shredded it.)
1 Cup of whole milk or half and half (add more if you like it more creamy, i used milk because half and half grosses me out)
Let it simmer about 10 more minutes and serve.

I'm guessing it's about 6-8 servings so about 200-250 calories per serving. I didn't break down all of the nutrients, but it's pretty simple since there is really only salmon, potatoes and milk.
