Quick and Easy Lunch Ideas

So I'm horrible at planning lunches for myself. I was just venting elsewhere that I feel like once I get off work I head home and spend the rest of my life in the kitchen/laundry room. Once I get my hubby's lunch packed and my son's bottles made I just randomly grab "stuff" for me to eat. Really not the best way to lose weight. So... what's some quick and easy(and nutricious) lunch ideas that I don't have to spend a ton of time prepping??

    This requires a one time prep, but you could batch cook a couple of favorites on Sunday, dish into one serving containers and freeze for a easy meal to go.

    Otherwise:
    Chicken salad wrap - canned chicken, your choice of mayo or a dressing, some veggies
    Any other kind of wrap or sandwich.
    Chili (requires pre-prep)
    Big salad with canned or precooked chicken tuna or steak with loads of veggies
    Leftovers
    Soup

    What about leftovers from dinner? My wife and I generally make a couple of extra servings and pack them for lunches. Because some things we make have 6 - 8 servings, we can mix it up rather than having the previous night's dinner for lunch the next day. And, as mentioned above, freezing the extras from large recipes in single-serving containers makes for a convenient to-go meal.

    I make big batches of soups, chilis, etc in the slow cooker and then freeze them in plastic containers. I also love Amy's burritos and a piece of fruit for a quick-grab lunch.
  • I typically pack my lunch & snacks while I'm making dinner. It cuts down on prepping & cleaning. If I make larger meals like spaghetti or chilli I portion out leftovers into containers & freeze them so I have a variety of meals. I also grill several chicken breasts at a time for wraps & salads.
