Good NON-DAIRY Melting Cheese????

I've recently discovered that I can't eat cheese without getting really sick. It affects me more than milk but I can't seem to keep myself from using it in my cooking. Can anyone recommend a good non-dairy cheese that works well with cooking (ie. mac and cheese)?

I've yet to find a vegan cheese that is as good as the real thing. Redwood Vegi Deli do one that sort of melts but I find it hard to come by even in health food shops. Sometimes I can get it, sometimes I can't!0

I'm not sure how to help you stop adding it to cooking if making you sick isn't working...that would most definitely get me to stop eating pretty much anything.:sick:0 -
Good question. I don't cook with cheese because I'm lactose intolerant. A non-dairy cheese would be cool, but I've gotten along pretty well without cheese for a couple of years now, so *shurgs*. Maybe just time to cut the cheese entirely?0

Try goats cheese. Or sheep/ewe's milk cheese.
I'm slightly lactose intolerant (although not so bad now - used to feel quite sick after eating dairy when I was a kid - and I switched to goat which totally sorted it. I think it may have to do with different enzymes in goats milk, or it doesn't have lactose in it.

A lovely chesse to have (although I this one doesn't melt ) is Halloumi. I call it squeeky cheese ! It is lovely sliced & grilled & they even do a 'light' version in some places
A friend of mine is lactose intolerant, as as long as she bought the right type, she would often have it. (The slightest spec of dairy in her case case could be lethal).
