Low calorie Apple Chicken Casserole
I kind of made this up a few months ago. Every time I do it slightly different (use more/less oil, more veggies, etc), but every time it is generally under 1 calorie per gram (the one I made tonight was 392 calories for 400 grams. Yours will depend on what ingredients you use as everything can very so much. I also make it in the crock pot and leave out the oil and it makes like a thick stew type meal (about 0.76 calories per gram). But I love oil and I like the crispier version.
My original recipe is this (all raw ingredients):
400 grams chicken breast (I take ALL fat off, I hate fat on meat unless I am making gravy or stock)
650 grams of potatoes
250 grams of carrots
200 grams of apples (peeled and cored, I like honeycrisp)
150 grams of onions (after peeling)
2 tbsp honey
2 tbsp oil (I like the thickness and flavour of olive oil with this)
Cut the chicken and potatoes into about 3/4 inch cubes and the apple into about 1 cm cubes. Slice onion and carrots. Put in large casserole or roasting dish. Drizzle oil over the entire thing and add salt and pepper to your liking (I also usually add in some garlic powder). Mix well. Drizzle honey and add a bit more salt and pepper. Put in over set at 375 for about 1-1.5 hours. Keep an eye on it and stir after 40 mins. I make it in double batches and it takes 1.5 hours. I think it is only an hour for this size.
