Help - i need meal ideas

I need some help with some daily meal Ideas / recipes. I am on a fairly strict diet (allergy and medically driven) and I'm starting to get bored with the same healthy foods every day.

I'm trying to Nett 1200 calories (Low Carb) over 3 meals (10am, 2pm and 6pm)
(A part of my medical condition is I don't get hunger pains - So I don't need snacks.. as it is I have to have a set a routine so I remember to eat)
Exercising about 30 - 60 min Low impact

I've lost 40lb so far with at least 40lb more to go.. (80lb more to get my BMI into "healthy" range)
but I have plateaued right on the 220lb (99kg) mark


My Diet restrictions are as follows:

No Cows Milk Protein - (not just Lactose Free but anything with Milk Protein in it)
No Soy Products (although Soy Sauce seems to be ok in small amounts)
Minimal Wheat - (i'm not Gluten Free, just reduced gluten - still eating Oats)
Avoid Yeast
Nothing from the Ocean - seafood / shellfish / seaweed (Although I can eat Canned Tuna 1 - 2 time a week for some weird reason)
No Mushrooms
No Caffeine (That includes Chocolate / Cocoa)
No Melon Fruits
No Citrus Fruits
No Bananas
Other Fruits that are out (Kiwi, Guava, PawPaw etc)
Max 6 Eggs per week



Current Eating :

Breakfast
Rolled Oats with Almonds, Sunflower seeds, pepitas, Linseeds(flax Seeds), Sultanas, Dried Dates and desiccated coconut
Almond Milk

Lunch
Salad (lettuce, tomato, carrot, celery, corn, 5 bean mix, beetroot, green and red capsicum)
Some form of Protein (can of Tuna, left over meat from night before, or 2 soft poached eggs)

Dinner
Some form of Protein (Lamb Chop, Minced Meat, Pork Chop, Chicken Breast, Diced Beef)
Veggies (A mix varied from: Onion, Potato, Pumpkin, Kumara, Carrot, Cauliflower, Broccoli, green beans, zucchini, Brussels Sprouts, silverbeet(spinach) )
This is varied between casseroles, stir-fry's and straight "meat&veggie"/"roast dinner" - each dinner has at least 5 veggies in it
(My mother taught me "red/white/green in every dinner"



Any suggestions for quick or made in advance meals much appreciated.
