Egg in a Mug
This is from Hungry Girl, a cookbook that I absolutely love.
Pour Egg Beaters (or any egg substitute) or egg whites in a mug sprayed with non-stick cooking oil
Break up a packet of any flavor Laughing Cow cheese; salt and pepper lightly
cover and microwave about 2.5 minutes, stirring midway
keep cooking until just set
DO NOT OVERCOOK
1 point for eggs, 1 point for cheese and pure protein that will fill you up
Additionally
......add pieces of turkey sausage or drained spinach or salsa...play with the Laughing Cow varieties of cheese

I love to do this too. Microwaveable cappuccino mugs are awesome for this purpose -- just grab a spoon when its done and you have breakfast with a handle!
Word of caution though -- don't use fresh tomatoes in the mix while cooking (save them for garnish). It'll make for very, very watery eggs.0
