Quick Single Serve Pancake

I made this the other day for breakfast and it's a good combo of complex carbs & proteins. It was about 215 calories (including the blueberries I added). It's so simple, all you need is this:

¼ cup instant oats
2 egg whites
half a mashed banana
pinch of cinnamon or vanilla extract
add-ins like berries or nuts (if you want)

Mash the banana then mix it into the oats and egg whites. Whisk it up really well so it's nice and fluffy, then fry it like a pancake! Heat your pan well beforehand with some cooking spray. Make sure you let it sit enough on either side so it sets, use a plate to flip if it's easier for you. Top with some sugar free or light maple syrup and you're good to go - I really enjoyed it and it was DELICIOUS. I didn't feel like I was missing a whole stack of pancakes, it was enough to satisfy that craving. Makes a great pre- and post-workout snack too.

Hope you enjoy!
