Savory Crepe Ideas

So mfp community, I was finally able to give my husband and idea for a Christmas gift. A crepe pan, but now I am on a hunt for the best and most flavorful SAVORY fillings. I did a google search for fillings and what I found so far really was not encouraging. So much unhealthy sauce! So if any of you have a favorite combination I want to steal it from you then give you a pat on the back for a job well done.
btw we are not sweet eaters so all those filled with cream, fruit, and cheese..they are not for me

Goat cheese, extra virgin olive oil, zahtar, olives
Poached egg, white truffle oil, espelette
Smoked salmon, shaved fennel, lemon, extra virgin olive oil
Grated parmigiano reggiano and melted butter
Fire roasted bell pepper (with garlic and olive oil and ground to a paste)0 -

Use your imagination, and see whats in your fridge, and let the flavors come together. Here are a few examples:
Sauté mushroom and shallots in butter, add cream and fresh thyme, add leftover sliced turkey, transfer to crepe, add emmentaler or Swiss cheese, fold crepe
Sauté shredded cabbage in butter, add a few grains of fennel seed, add sliced leftover turkey, transfer to crepe, fold crepe, then top it with a dollop of leftover cranberry sauce
To crepe, add cold Sliced leftover turkey, sliced tomato, basil leaves, fresh bocconcini, extra virgin olive oil, fold crepe
Just go crazy with whatever. You won't be disappointed. And if you do screw up, don't worry. Learn your lesson, and you'll be better next time.

had the best crepes in paris with chicken, garlicky mushrooms, shallot, cheese
spinach (pre cook and water/juice drained) with feta or goats cheese0 -

Whatever you want! We do it pretty plain here - smoked salmon with boursin, ham swiss and egg, cheese... Easy, healthy and delicious. The crepes make for most of the calories though (and I make mine pretty plain, but they're still about 130 calories each).0
