For everyone who followed the coon post a month or so ago (which i cant find now), we finally got several.

Turns out-raccoon is almost exactly like rabbit.

Heres what we did:

1. Get a raccoon. DO NOT trap or shoot a raccoon within five miles of a town or city-their diet will be trash. If you cant get one from the woods-dont get one. We have been trapping them by our chicken coop (thou shalt not bother my birds!) Once trapped-one shot from a high powered bb gun or .22 between the eyes will dispatch them instantly.

2. Skin and gut the coon (if you arent practiced at cleaning game-skip step one and get a cheeseburger.) If the meat smells off (should smell like game) discard the animal. If there are visablr parasites-discard the animal. If the organs are mottled, pale, or tumorous-discard the animal.

3. Quarter and rinse. Rest the mest for 24 hours in the fridge, or cover with water and freeze until youre ready to use it.

4. Soak the meat for 24 hours in buttermilk or brine.

5. Rinse, trim fat. There are scent glands in the fat of the armpits and inside the inner thigh. Remove all four.

6. Parboil the meat (you can season the water or use broth to flavor). Skim off any fat that rises to the top.

7. Cool the meat. Either debone and use as is, grind, or leave whole for roasting.

8. For chili-fine grind meat. Cook in a skillet until no pink is visable. Add 2 TBS each onion powder, garlic powder, chili powder, paprika. 1/2 TBS cumin, 1 tsp salt. Add 20 oz tomato sauce and 3 cups water. Cook until thivkened (med heat for 25 minutes).

And there you have it. Tastes like rabbit, and cooks into a nice chili.
