"I Can't Believe It's Turkey!" Meat Loaf Muffins

Ingredients
1 Tbsp Olive Oil
3/4 cup finely chopped onions
1/4 cup finely chopped green pepper
2 medium, minced garlic cloves (or more/less to taste)
1/4 cup low fat shredded cheddar cheese
1/3 cup quick oats
1.5 Tsp Italian Seasoning
1 Tsp Ketchup
1/2 Tsp Salt
1/2 Tsp Black Pepper
1 Large, slightly beaten egg
1 1/4 lb uncooked ground turkey breast
Cooking Spray
1/2 cup Ketchup
1 Tbsp Splenda Brown Sugar Blend
1 Tsp Mustard
Instructions:
Preheat oven to 350.
Heat oil in large nonstick skillet over medium-high heat. Add onion, green pepper and garlic. Saute 3 minutes then cool.
Combine onion mixture, cheese and next 6 ingredients in a large bowl; toss to moisten oats. Crumble turkey over onion mixture; blend. (works best to just use your clean hand...)
Spray a muffin pan with cooking spray and evenly pack mixture up into 6 muffin cups. Place muffin pan on a cookie sheet (in case juices overflow) and bake on middle oven rack for 30 minutes.
While it's baking, combine the 1/2 cup of ketchup, Splenda brown sugar blend and mustard in a small bowl and blend well.
After it has baked for 30 minutes, top each 'muffin' with the ketchup mixture and bake an additional 5 minutes. Let stand 10 minutes.
