Oatmeal with Fried Egg and Avocado
Before I post this recipe I want to make clear that this is NOT my recipe. I originally discovered it in the April 2013 issue of Real Simple. I'm only just now eating it and it's so scrumptious that I thought I would share. Also, when I logged this I did include the olive oil and the entire recipe, for me, totaled 391 calories.

Serves: 1
Prepare 1 serving quick cooking or old fashioned rolled oats according to the directions. Cook 1 large egg with salt and pepper in 2tsp olive oil in a small nonstick skillet over medium heat, covered, 2 to 4 min. for slightly runny sunny-side-up. Serve on the oatmeal with 1/4 sliced avocado and 2 tbsp. fresh salsa.
I'll admit I was very skeptical of this recipe but it really is delicious. I hope someone else enjoys this too!
