Frittata is easy and portable - you can make a big tray of it and freeze in portions. It'll include protein, fats and you can add loads of vegies. It can be eaten cold or warmed up.

I do celery sticks with peanut butter and raisins, sometimes an apple with peanut butter (jif makes a serving size container) I also have started making smoothies with greek yogurt in my small blender

    Easy crustless quiche
    2 whole eggs
8 egg whites(the kind in the carton work great)
1 roma tomato, seeded and chopped
    1 med zucchini, chopped
    ½ bell pepper, chopped
    1 cup raw spinach, wilted
½ onion chopped(can be cooked slightly with spinach)

Combine everything in a bowl and pour into a 9x9 baking dish sprayed with cooking spray. Bake at 350 for about 20 min or until center is set up. Cool and cut into 4 portions. Can be eaten cold or microwaved about 30 sec. Great served with salsa. About 100 calories a serving.
Tip: Use up extra leftover veggies. Any veggies will work, use what you like.
Cook ahead of time, easy to grab and go.

It can be made in muffin pans too.

Skinny bagel, with 1/3% less fat cream cheese, and a couple slices of ham or lean meat of your choice.

Yogurt, fruit and a handful of granola. Eggs take like 3 minutes, or a smoothie. Like to make breakfast sandwiches, add a slice of turkey, ham, bacon, an egg, some cheese and put on while grain toast, a bagel, English muffin, or hamburger bun. I like it cause its fast, and versatile, depending on what i have on hand. Sometimes I'll add whatever was leftover from dinner- steak or veggies!

Hmm... low-carb soft tortilla & cheese makes a yummy quesadilla when you're on the run. :)

I usually make a quick egg, cheese, spinach and deli turkey sandwich on english muffin or multigrain sandwich thin. Also, the new Special K hot cereal bowls are yummy.....
