Creamy Potato and Lima Bean Soup

This a nice light but tasty soup and very easy to make.

Ingredients:

~5 medium size baking potatoes, peeled, and cut into 1/2" cubes (or as close to cubes as you can get!)
1 small bag baby lima beans
3 cups unsalted chicken stock (broth works too.. and salt is fine if you prefer)
2 medium onions, peeled and finely chopped
1 cup shredded carrots
Salt and Pepper to taste
1/2 cup heavy cream
2 cups shredded cheddar cheese

Layer from bottom to top: onions, potatoes, carrots, lima beans, and then top with chicken stock, salt, and pepper. Add another 2 cups of water to cover ingredients in a medium crock pot. Cook on low for 6-8 hours until potatoes are soft. With a whisk, whisk soup gently until potatoes are broken up and soup is a creamy consistency. Add heavy cream and cheddar cheese. Mix well and let sit on low for another 20 minutes stirring every 5 minutes to mix cheese in.

We served this with italian bread and crumbled bacon on top. It was very tasty.

Makes 12 big bowls.
