Overnight Oats!

I love overnight oats. I'm a college kid without more of a kitchen than a mini fridge and a microwave, so overnight oats are a godsend. My go-to is strawberry banana, but I'm looking for some other recipes. I know you can add literally anything under the sun to them, but I'm wondering what some of your favorites are?

    I can't get enough of Bob's Red Mill STEEL CUT Oats. They really are best when they've been allowed to sit and steep for at least a few hours. Following the recipe on the bag will give you a chewy bowl of pellets. I often make them in an overnighty kind of way. There are probably other brand's of steel cut oats out there, but Bob's is available at my local store.

    The recipe on the bag, listed below, makes two mongo huge bowls, so I usually cut this in half because my wife does not like oatmeal (boo).

    3 Cups Water
    1 Cup Oats
    0.25 teaspoon salt

    Microwave for 5 minutes then stir
    Microwave for 3-5 minutes then stir again
    Let sit overnight or for a few hours. Reheat for 2 minutes when you're ready to eat

    You can add almost anything: Berries, honey, a little Noosa or yogurt for extra creaminess, pecans, walnuts, raisins, a teaspoon of jam, molasses, syrup, any type of fresh fruit that might have gotten too ripe to eat on its own...

    I love overnight oats! Especially in summer when I really don't feel like having something hot in the morning.

    The basis is always:
    - 2 Tbs old fashioned oats
    - 1 tsp chia seeds
    - 1 tsp flaxseed meal
    - 100ml (approx) unsweetened almond meal
    - 85g 0% chobani plain greek yoghurt

    Add-ins:
    - strawberries and cinnamon
    - unsweetened cocoa and kiwi
    - mango and vanilla extract
    - grated apple, cinnamon and nutmeg
    - blueberries, desiccated coconut and cinnamon
    - nectarine, vanilla extract

    Optional:
    - almonds (whole or shaved)
    - coconut flakes
    - honey
    - vanilla/almond extract

    I had some this morning and I left the oats in vanilla almond milk and added raspberries to it :) Quite good

    My favorite way is to add some frozen blueberries and a couple of tablespoons of sugar-free Vanilla Syrup (Skinny Girl or Torani brands) when I stir in the yogurt and let sit overnight. My 'go-to' breakfast in the summer.

    I've tried overnight oats in the past and hated it. I'm going to try again though, so I'd love to hear ideas.
