What do I feed my vegetarian boyfriend?

So I started dating this great guy a little over a year ago and he is a vegetarian. I absolutely love love love to cook and do it pretty often but am starting to run out of yummy recipes and our traditional favorites are becoming increasingly boring...any ideas???

I just made my own Seitan and it turned out fantastic - it's a meat substitute made from wheat gluten. You can also buy it pre-made, probably from healthy food stores or stores that cater to vegetarian. Here's the receipe I used:

I guess it is traditionally made by boiling the dough in a broth, but this receipe is for baked Seitan, and I found that very easy (and much less intimidating) than some of the other recipes I found.
You can also make your own veggie burgers with lentils, mushrooms and a bunch of other possiblities. I don't have a handy recipe, but I'd google "homemade veggie burger" , "homemade mushroom burger" , etc. to get recipes.0 -
Hi- we eat mostly vegetarian meals..Vegetarian times has lots of recipies that are not full of unfamiliar foods..Eating Well magazine is also a great resource. This is one of my favorites right now- http://www.eatingwell.com/recipes/summer_squash_white_bean_saut.html

I'm not vegan nor vegetarian and I too love to cook, but I love love love this website. Not only is everything nearly fat free (and meat/dairy free), she also lists the nutritional information for her recipes.0
