i take lunch to work everyday.
I ussually bring a left over chicken breast/ lean protein that grilled, baked, etc the night before
and add a side of black beans, rice, green beans, brocoli, asparagus or other veggie.0 -
soups, stews and chilis from home OR a gluten free wrap in place of a gluteny sandwich!0

I know you said you don't do many carbs but I love soup for lunch. I go for a vegetarian, non-cream based soup. Progresso has a great Heart Healthy Southwest Black Bean Soup or a 99% Fat Free Lentil Soup. I have the whole can and some string cheese. It's a good warm meal and I feel full for a long time.0

Well, I am really boring because I eat the same thing every day for lunch. But, it works for me. I eat chicken breast, raw mini carrots and grape tomatoes. Sometimes, I will have a mini babybel too.0

sweet potatoes with a little cinnamon and cottage cheese on the side with salt and pepper.

Since I prefer to have protein during breakfast or dinner, I go for fruits and veggies during lunch. Plus it staves off that urge to go to the vending machine for sweets.0

I do cook ups on the weekends. I make 3 or 4 double or tripled meat recipes and eat them all week for lunch and supper. Veggies are easy, just steamed or fried up or raw and always with lots of healthy fats. I never get tired of eggs but I don't eat them everyday either.0

I usually drink a Premier Protein shake. You can only get them at Costco. Only 1 gram of sugar, 30 grams of protein to make you feel full. I like the vanilla ones.0

I eat soup almost everyday now that it is winter. It fills me up and I can incorporate a lot of veggies in with not a lot of effort. I usually with have a piece of fruit or some applesauce and be good to go until dinner time. Right now my go to is a sausage and potato soup with a chicken stock base.0

I've been on a tuna salad kick lately. I make mine with a can of tuna in water (drained), about 2 tablespoons of low fat mayo, a few teaspoons of sweet pickle relish, a diced hardboiled egg white, and whatever veggies I have on hand (I like sweet pepper, carrot, celery, and sometimes onion). You could do something like that wrapped in lettuce leaves or with veggie dippers.
As others have said, this time of year is great for soups and stews. Throwing a batch of something together to simmer on the stove on Sunday afternoon will give you lunches to look forward to all week.0 -
I go through phases with my lunches and right now I'm in the "hot food" phase since it's so cold outside! I've been taking leftover dinners to work (things like chicken and veggie stir fry, chicken parm, steak and veggies, usually some kind of meat and veg).
Sometimes I'll bring some lower sodium soups. I've also just discovered the Green Giant "antioxidant blend" frozen veggies, and there's also some with beans in them. Those are so good. Today I have the antioxidant blend one, with a sliced up cucumber, roasted red pepper hummus, string cheese, and a Lindt chocolate truffle! For my afternoon snack I have Chobani and fresh blackberries.0
