Eat everything or be picky?

Hey guys, I used to weigh 16 stone (6ft tall) a couple of years ago, 12 last year and now 8 stone 8 lbs. I used to LOVE my body, I was a boxer at my local club and when I used to win fights I got motivated and trained so hard, was awesome.

I got a really bad illness, I didnt think id ever recover but I did. The consequences are 16 stone to 8 8lbs in 3 years. I feel like ive forgotten how to gain weight and stuff, it used to come naturally but now I just cant.

I bought a whole range of nuts because my former trainer always told me they were high in all the stuff you needed, I also got some chicken and the usual stuff. what I was wondering is for now does it matter what I eat? Should I gobble back every piece of thing from chocolate to burger to kebab to peanut just to pack the pounds on or should I be picky and choose healthy, high fat foods?

Im not gonna bother training until I hit 10 stone, at this weight Id end up injuring myself or something.
