75 calorie chocolate chip cookies

I just made a batch of these for a party, and they turned out very tasty with a light fluffy texture and only 75 calories each.
Makes a batch of 60 cookies
Ingredients:
1 cup vegetable shortening with 2 tbsp water
3/4 cup splenda brown sugar blend
1/2 cup egg substitute
1 teaspoon almond extract
2 1/3 cup all purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup semisweet chocolate chips (I used the mini's)
1 tbsp sifted unsweetend cocoa powder (optional)
Preheat oven to 375 and lightly grease baking sheets.
In a stand mixer, beat shortening until creamy and smooth (medium speed for about 90 seconds). You can also do this with a handheld mixer. Slowly add sugar and beat until fluffy (medium speed for about 5 minutes). Be sure to scrape the sides of your bowl so that all sugar blend is included. Beat in egg substitute until thoroughly mixed. Add almond abstract. In a separate bowl, whisk together dry ingredients (flour, baking powder, baking soda, and salt). You can also add 1 tbsp cocoa powder here if you want. Add dry ingredients to wet ingredients mixing 1/2 cup dry mix at a time. Gently fold in chocolate chips.
Use a greased cookie scoop or pair of spoons to drop about 1" dollops onto cookie sheet approximately 1" apart. Bake for 9-11 minutes until tops are slightly browned.
