Steel Cut Oats - question

For those of you who are fans of steel cut oats, can someone let me know if it's possible to make up a larger batch and keep it in the fridge or freezer, and if you can freeze a batch, would you thaw it in the microwave? I tried steel cut oats for the first time this morning and I really like them but I wouldn't have much time to cook them on the stove during the work week. I'd love to be able to make a batch to use throughout the week.

Yes. I make 4 servings at a time. If it's the weekend, I eat one right away and then have it for 3 days of work (heat it up in the microwave). Or, when I run out mid-week, I make a batch and then just take one portion each day. I store it in the fridge; depending on space and available containers, I'll either put it into single serving tupperware containers or one large one...then I section off a piece (once it cools and you put it in the fridge, it will firm up. So you kind of need to "cut a slice of it". It loosens up when you reheat it. I would also add a touch more water when you're making it so it doesn't get too firm.
Though it takes 30 min, that's not long enough (for me at least) to make such a large batch that I would freeze it, though I think you probably could (though, it may depend if you use water or milk as the liquid).
I found a blog called "The Oatmeal Artist"; she has many many many oatmeal recipes....steel cut, traditional, overnight. It's great for getting ideas.

I love steel cut oats and eat them every morning. I do the same as the other posters.... I cook 1/2 bag of Bob's Red Mill Steel cut oats, which gives me breakfast for several days. In the morning I add a little water, reheat it, and slice an apple in it instead of sugar. I do that about twice a week. The oats take too long to cook to make every day.0

Making one batch at a time took a lot of time so now I make about 4 - 5 servings at one time.
I take a mason jar fill it up with about a cup of dry steel cut oats. Fill up the jar with boiling water and let it sit out overnight.
The next morning the water will have soaked into the oats then I take a cupcake pan and fill it up with the oats and freeze. I usually leave out 1 serving one to eat that morning. After they are frozen I pop them out and place them in a freezer bag and store in the freezer.
When I'm ready to eat a frozen serving I'll put one into a bowl, add a little water and put it in the microwave then add flavorings (cinnamon, apples, brown sugar, protein powder, berries, raisins etc.)
It may sound like a lot of work put it's not. I like freezing them because I don't eat steel cut oats everyday and I like knowing I have some already cooked and ready to go.0 -
Great answers! I too make a batch that last about four days then make more. Steel cut oats are the ultimate breakfast good to kick off your metabolism.. just add cinnamon and blueberries.

You got it. The boiling water cooks the oats and letting it sit out allows the water will soak into the oats expanding them. I put a frozen serving in the microwave for about 60 seconds. It's warm but not piping hot so if you like them hot maybe try 90 seconds? Let me know how it goes! I'm about to get one out of the freezer now.

I wanted to add I have a friend who makes a large batch in his crockpot/slow cooker overnight once a week and store in the fridge and microwave a serving at a time and that works well for him.0

I always make steel cut oats with 1 c. oats, 3 c. skim or lowfat milk, and 1 c. water. I soak them overnight and cook over the stovetop with a bit of brown sugar, cinnamon sticks, splash of vanilla...and sometimes add dried fruit. It makes 4 servings. Usually my husband and I make this on a Sunday morning and refrigerate the leftovers so we can each have it 1 day during the work week. I hope this helps. Also, the leftovers refrigerate and reheat in the microwave very well..I've waited up to a week to eat mine and they tasted just as good as Day One.0

The changes I made to the recipe were to omit the butter for toasting the oatmeal and I used low fat almond milk (30 calories a cup)-it was delicious, it made 8 large and easy to pack servings. When I got to work, I would just add a little more almond milk and heat in the microwave to warm. Think next time I make it I will add nuts to the final warmed product for some crunch and taste.0 -

I don't know about freezing steel cut oats, but cooking them in the crockpot has improved my life.
I put 3/4 cup of dry steel cut oats and 2 1/2 cups of water into the crockpot on in the evening. Before I go to bed, I switch my crockpot to "Keep Warm." You might have to play with the settings on your crockpot. Basically, mine are cooking overnight on the lowest setting possible. Done when I wake up!0 -
There is also the option of soaking the oats in the refrigerator for cold-cooked oatmeal. There are several recipes on the web. Just google cold cooked oatmeal. And if you want your oatmeal to be warm, you just microwave it for a minute or two. I have done it many times myself and it is pretty good.0

Jumping in here, since I do this too. Yes, pretty much. I make a batch of whatever flavor I want for the week in the crockpot (usually apple cinnamon). Just make sure you spray the crockpot with cooking spray, or else you'll wind up pissed off and hungry in the morning! And it only needs to cook on low for 6 hours.
To reheat I do add a tiny bit of milk.0 -

I got an inexpensive 2qt crockpot. I put it on high for about 2 hours, stir it, then drop it to warm for the rest of the night. It's typically on low from 9 or 10 p till 6:30am. Give it a good stir and puts your add-ins on and yumm.
And yes...spray with non-stick spray first!0 -
