my favorite fish recipe of all time yummy yummy yummy!!! I also replaced the white rice with instant brown rice and and baked a couple minutes longer.0 -
I LOVe fish!! My favorites are salmon, sole, haddock, halibut or tilapia.
Here's one of my favorite fish recipes:
Parmesan-encrusted Tilapia
2 servings
Ingredients
2 skinless tilapia fillets
Freshly ground black pepper
1 tablespoon dried basil
1/4 cup Parmesan
2 teaspoons olive oil
Directions
1. Preheat the broiler. Cut the tilapia fillets lengthwise into two pieces, then pat dry with a paper towel and season to taste with pepper. In a small bowl, combine basil and Parmesan; set aside.
2. Heat olive oil in a 12-inch heavy ovenproof skillet over moderately high heat until hot but not smoking. Sauté the fish for 3 minutes or until brown. Flip the fillets; remove the skillet from heat. Dust the tilapia with the cheese mixture. Place the skillet under the broiler to finish cooking the fish and slightly brown the cheese, about 3 to 4 minutes.

I heard about this on TV and it works! Crazy.
Boil a cup of tea, like jasmine tea or darjeeling. Put tea bag in and let it steep. Meanwhile, you have a thin piece of fish like a salmon fillet. After the tea has steeped, take the tea bag out and pour it over the fish. Let it sit for about 3-4 minutes. It will cook in the hot water!
Good with a side like rice or cous cous, and a veggie.0
