    Usually when people eliminate gluten from their diet they can reduce headaches not because of the gluten, but because they are eating less sugar. Almost everything you think of with gluten is also highly-processed, and has added sugar. Sugar spikes and crashes cause headaches. Eating less gluten products means eating less sugar, which means fewer spikes, which means fewer headaches.
