Chocolate Hazelnut Protein Waffles – Low Carb and Gluten-Free
Low Carb Chocolate Hazelnut Waffles. A hearty gluten-free breakfast to start your day right.
Yield: 6 thick waffles or 8 to 10 thinner waffles
Serving Size: 1 waffle
Ingredients
1 cup Hazelnut meal
1/2 cup Chocolate protein powder
2 tbsp cocoa powder
2 tbsp coconut flour
3 tbsp Swerve Sweetener or granulated erythritol
4 large eggs
1/3 cup full-fat Greek yogurt
3 tbsp hazelnut oil
1/2 tsp hazelnut extract
1/4 tsp stevia extract
Instructions
Preheat waffle iron to medium high. Preheat oven to 200F and place a wire rack over a baking sheet.
In a large bowl, whisk together hazelnut meal, protein powder, cocoa powder, coconut flour and sweetener.
Whisk in eggs, yogurt, hazelnut oil, hazelnut extract and stevia until well combined.
Grease waffle iron if necessary and pour 1/4 to 1/3 cup of batter into each section of the iron.
Close the lid and cook until browned and crisp. Gently remove and transfer to prepared baking sheet in oven to keep warm.
Repeat with remaining batter.
Top with whipped cream, butter, berries, chopped hazelnuts, sugar-free syrup, whatever you desire.
Notes
Serves 6. Each serving has 11g of carbs and 4 g of fiber. Total NET CARBS = 7 g.

While at Red Mountain Spa, I learned to make mashed cauliflower as a replacement for mashed potatoes. Now, I also use it mashed to thicken chowders, and grate it and use it steamed as a replacement for rice, orzo or grits (top with a poached egg) as well. My husband actually prefers it now.0

As you were writing this post, I was looking at a recipe for "cauliflower rice" and "cauliflower pizza crust" I haven't tried them yet, but they both sound very interesting!

Cauliflower pizza crust is really good. I remembered it later. Tonight I had "pasta" using spagetti squash which is my go-to quick dinner. It can also be topped with clams or pesto. Thinking about trying it as Mac and cheese too.0

Crack Slaw. It's given the name because it's addictive! There are several recipes on the internet. The one I use includes ground beef, cabbage, onions, lite soy sauce a pack of splenda, sesame oil (definately use sesame oil for the flavor), garlic, ginger and a splash of vinegar. I like it hot so add red chili flakes or sriracha. Yum! I don'tlowcarb anymore but still make this stuff. MyDH loves it.0

There is so much you can do with low carb. My favorite with Fall right around the corner is spaghetti squash, ground turkey and marinara.
Cut Spaghetti Squash in half, drizzlewith olive oil, sprinkle with salt & pepper, bake face down at 350 degrees for 30 minutes or until tender. Use a fork to scoop out the "spaghetti".
Use a frying pan with a littel bit of olive oil to brown your ground beef, add garlic, add marinara .. mix until hot and you are done! Serive over Spaghetti Squash!
Spaghetti squash with feta, garlic, and olive oil is also yummy!0 -

Zuccini Spaghetti

I own neither the julienne peeler, nor the spiral slicer. I used a mandolin with the julienne attachment. 2-3 swipes on every surface before I start hitting the seeds, and saute.
Cauliflower Rice

I use only 2 Tablespoons of what ever fat or combinations of fat I am in the mood to use, and I often replace the spices with just salt, pepper, and Kirkland no-salt seasoning. It's awesome. If I'm going to save half of it for later, I take the amount I want while it's still slightly underdone. It is also pretty great cold and a bit crunchy.0 -
I love this low carb pancake and smoothie recipe I found
Pancakes:
Mix all of this into a blender, then you have the perfect pancake batter)
All bran buds (I know they have a lot of carbs, but most of it is fiber which is a good carb that doesn't affect low carb diet plans, always subtract the amount of fiber from carbs)
1/2 banana
1 egg
1 scoop of protein powder (whey)
1/3 cup of water
1 tablespoon unsweetened coco powder (optional if you want chocolate pancakes)
And you can also add a few berries into the meal to make it a little sweeter
Smoothie
1 scoop protein powder
1/2 cup baby spinach or kale
3-4 strawberries
coco powder (optional)
1/2 cup Water or coffee (I prefer coffee in the mornings)
1 teaspoon stevia/splenda
1/4 cup greek yogurt unsweetened non fat0 -
