Hey all!
I am on the warpath to start making healthier food and was wondering if you guys could share some of your favorite recipes or recipe blogs :) I love diversity and want to see what everyone else is into! :bigsmile:

    Shine.yahoo.com - has some good recipes from time to time but is really useful for making healthier swaps and health tips in general. Their articles are very helpful

    LOVE Skinnytaste and Chocolate Covered Katie too. I'm also gluten free (for medical reasons not choice :frown: ) and I'm really into Gluten Free Girl and the Chef and A Girl Defloured. Chef John from Foodwishes will ALWAYS have a very special place in my heart and I will forever watch him even if I have to tweak the recipe a bit. He's just a boss with a tiny wooden spoon. I also just found this recipe for an easy early morning muffin. I make it in my coffee mug after I finish my morning cup of energy.

    1/4 cup Flax Meal
    1 Egg
    1 tsp Oil
    1/2 tsp Baking Powder
    1/4 tsp Sugar

    Mix it up and microwave on high for 1 minute. I just throw a bit of butter on there and eat it right out of the mug. No extra dirty dishes and it's been a great alternative for cereal for me. 8 grams of fiber too! I've added cranberries with great results too. I've always like cereal, muffins, breads, etc for breakfast, but since going gluten free, I've kind of gotten out of the habit. It's nice to have a baked good for breakfast again.

    Oooh yay thanks everyone! Very cool. I am going to have to bookmark all of these...I love cooking but I cook like I was raised...southern, with lots of butter and salt. Lol :sad:

    Try the Cooking Light website. They have a lot of really good recipes and list out all of the related nutritional info.

    If you're a Southern girl who likes her collards, here is a healthy version of collards, which cook only 45 min and are incredibly tasty and super low-cal for a big portion. I also add a smoked turkey wing or leg on the advice of another FPer, add back the meat and treat my dogs to the skin.

    i like putting flavor in to my food . i have all the basics . i love onion flavor too and sometimes i am not in the mood to cut one up so i keep freeze dried onion around. i have plenty of herbs, garlic . balsamic vinegar, coconut oil, olive oil , varied nuts , sea salt , franks hot sauce ..and i freeze my red bell peppers because i use them alot. you can cook anything if you got basics

    I found a great recipe for that old favorite comfort food "Tuna Noodle Casserole" and I modified it to make it more diet, diabetic and heart friendly. I made it today for lunch and my wife and I loved it.

    Easy Tuna Noodle Casserole (Low Fat)

    Prep Time: 5 mins
    Total Time: 1 hrs 5 mins
    Servings: 4

    Ingredients

    2 (6 ounce) cans low sodium tuna, drained
    1 cup Dreamfields elbow macaroni, raw
    1 medium onion, chopped fine
    1 cup of canned no salt added peas, drained
    1 (10 1/2 ounce) can Campbell's Healthy Request® Cheddar Cheese Soup
    1 (4 ounce) can no salt added mushroom pieces and stems, drained
    1 1/4 cup 2% milk
    2 tablespoons finely diced red bell pepper
    6 tablespoons shredded cheddar cheese

    Directions

    Preheat oven to 350 degrees F.
    Spray 8x8 Corning casserole dish with non stick spray.
    In a bowl, mix tuna, noodles, onion, peas, soup, mushrooms, peppers and milk.
    Pour into casserole dish. Make sure noodles are covered by sauce.
    Sprinkle with cheese.
    Cover & Bake for 1 hour.
