need help clearing up calories

OK, So I have posted a lot of post about this and a lot of you said I am eating way too low of calories. so I am going to put everything on the table and I would like for people that know a lot more about this to post to help me under stand this as I am new!
I am a male, and now weight 302.8 I Have lost 56 pounds so far!! (and feel great!)) I have been losing a total of 0.6 each day and some days 0.8
now before I started I did not eat breakfast, I only eat lunch a burger and wendy's and large fries,and a coke, for supper I would eat pizza 6-8 slices and a large coke and some cheese sticks. I added this up and I come up with about 2,200 calories I was eating each day at 359.8pounds.
now Since I have started I cut out sweets, fast foods, and pasta, pizza, and fried foods. I now eat 1-2 apples aday, and 1 banana a day, I eat oatmeal with orange juice for breakfast, for lunch a sub way 6" rosted chicken or turkey on wheat NO MAYO. for Supper Bake salmon with greenbeans, And I have been round 1,450-1,600 calories each day. from the book of Calorie King eat this not that it says for men to lose weight they should eat between 1,400-1,600 calories a day to lose 2-3 pounds a week. and I have been losing right at 3pounds each week.
so a lot of you have said that I could stop all of the walking I am doing and just eat 1,600 calories and I will lose weight, but if I walk 1hour and cut I am eating way to low. so I am so scared I will gain all of my weigh back by eating 2,000+ calories and I have done so great and feel much better, I want to keep lose at my rate but do not what to get down and so far I feel better than ever. but I am walking 50 mins each day 5 days week but is I stoped walking for a while and just eat at 1,600 will I still lose weight even if I do weight lifting for 3 days a week for 30+mins? any help will be great
All I know is before I was eating at 2,200 calories and I lower it down to 1,800 and di not lose any weight in 1-2 weeks but when I droped it down to 1,400-1,600 I started losing and keep loseing!
