Questions for successful low carbers

Let me start by saying this is not a low carb debate. I just need some information about low carb and fats from people who are successfully doing the program. What's your ratio of fat/protein? Do you do more fat than protein, about the same or more protein than fat?
I am only concerned because I just came off a vlcd protocol in which I was eating less than ten grams of fat a day and now I'm eating cheese that has 9 grams of fat per slice!!! Is that okay? I'm not going to eat the whole package, but one slice is almost more than the fat I was consuming in an entire day!
Any BTDT advice on fats and low carb would be appreciated.

Your cheese is fine as long as it is not like Kraft American singles.............

Yes, personally from everything I have read and have been reading stick to fats ...........

Animal fats (chicken skin, bacon fat, fat on steaks, etc)
Dairy Fat (cheese, full fat yogurt, full fat sour cream, butter)
    Virgin and organic Coconut Oil
    Olive Oil (Extra Virgin)
    Nuts

I do 40/30/30. Carbs, fat, protein. This is what Zone diet, South Beach diet and most diabetic plans use. I personally believe fats are essential. I try to have around 10 per meal and 5 per 2 snacks a day (which I rarely get in). So around 40gr to 45gr a day for me.
