So this soup is so good, easy, and healthy, I couldn't not share it. It's about 90 calories if you eat 2 cups as a serving. I usually make a pot and have a bowl for lunch.
2 cans of fat-free beef broth (regular sized cans
1 package of lipton chicken noodle soup mix
2 cans of reduced sodium green beans (or fresh...tastes better)
2 cans of fire roasted tomatoes
1 lb carrots
1/2 bunch of celery
1/2 bunch of green onions
1/2 package of mushrooms
1/2 head of cabbage
bay leaf
1 garlic clove, minced
salt and pepper to taste
Basically, chop up all the veggies. Sautee the carrots, celery, green onions, mushrooms in some olive oil (if you use fresh green beans add them too). When they start to get tender add the broth and tomatoes (I don't drain them) and green beans (if canned). Then add the cabbage and water for the soup mix. The recipe on the soup box says 3 cups, but I usually add closer to 5. I mix it all up and add the soup mix, garlic, and bay leaf. Cover it up, and let it simmer until the veggies are nice and tender. Add whatever spices you want to make it your own. You can add whatever veggies to it too... It's filling, and extremely healthy...just watch the sodium levels. I try to get everything as low sodium as possible.
If you want, boil a chicken breast, chop it up, and throw it in for some extra protein
