Easy Salsa Chicken-
3lbs bonesless skinless chicken
1 jar salsa
1 can diced tomatos
cook until you can shred the chicken apart easily (usually i do 4-6 hours on high?)
I've found that makes about 5 servings which I serve with Rice usually and is about 250cals/serving according to the recipe i created with a ton of protein, low fat and carbs0 -

I haven't tried this yet but am planning to tomorrow. I may tweak it bit since I already have salsa verde sauce premade but it seemed like a good starting point. I know it says to use the broiler but I think I'm going to cook it in the crockpot and then broil at the very end to get the skin a little crisp.

Chicken with Mushroom Wine Sauce
Ingredients:
- 1 (10.75 oz) can condensed Cream of Mushroom Soup
- 1 tsp. dried minced onion
- 1 tsp. dried Parsley
- 1/4 cup white wine
- 1 tsp. garlic powder
- 1 tbsp. milk
- 1 (4 oz.) can mushroom pieces, drained
- Salt & pepper to taste
- 4 boneless, skinless chicken breast halves
Directions:
1. In a slow cooker, mix together the soup, onion, parsley, wine, garlic powder, milk, and mushroom pieces. Season with salt and pepper. Place chicken in the slow cooker, covering with the soup mixture.
2. Cook on Low setting for 5 to 6 hours, or on High setting for 3 to 4 hours

Super-easy 2-ingredient buffalo chicken in the crock pot recipe!
Ingredients:
Chicken (thawed)
Sweet Baby Ray's Wing Sauce & Glaze: Buffalo Wing
Instructions:
1.) Put chicken in crock pot
2.) Pour enough of the Buffalo Wing sauce to thoroughly coat all the chicken (stir to make that happen) and leave maybe 1/2" layer at the bottom of the crock pot
3.) Cook until chicken easily pulls apart with a fork (cook time depends on amount of chicken used... for 1.5lb, I cooked for 5-6hrs on high, I think)
4.) Enjoy the deliciousness :-)
optional: add a small amount of blue cheese on top for added deliciousness
also optional: serve over a bed of spinach or rucola leaves to get the added health benefits (and increased satiety) of these foods
Note: Often, using sauces adds crazy amounts of calories... for example, Sweet Baby Ray's BBQ sauces have 70 calories in each 2Tbsp serving. But, the Buffalo Wing Sauce and Glaze has only 15-20 calories per Tbsp (so, 30-40cal per 2Tbsp, about half that of the BBQ sauces)... and the Buffalo Wing Sauce and Glaze is very strong/tangy, so you don't need a ton to get really great flavor!0 -

Yup, I like this one, too! I add cumin and chopped onion and bell peppers, but the salsa verde is the most important ingredient, and it's sooo easy!0
