Fresh Beets

I been craving beets but the fresh ones. Bought them today and going to steam them up and let them marinate in red onion, garlice, italian seasoning , balsamic vinegar and olive oil.. that over a bed of spring greens.spinach will do a body good.. am i the only one who likes beets? my family gets grossed out when I order beet salad appetizers at restaurants

    Beets are amazing! I love them in a salad and I love juicing them! My hubby didn't like them at first. He said they tasted like dirt but now he loves them in his juices.

    I LURVE beets! I roast them in tin foil with olive oil and sea salt, peel them, cube them up, then put in a bowl with goat cheese, toasted walnuts, a little diced shallot, fresh basil, olive oil, and cherry balsamic vinegar. Oh, and S&P of course. Divine!!

    I love gold beets too.
    I like to salt roast gold beets sliced up in the oven with EVOO. Then I serve them with a yogurt/cucumber dressing (made in blender with white pepper and garlic) and some cut up avocados on toasted rye bread.
    I LOVE beets.

    I love them too and we grow them in the garden in the summer! Yum, nothing nicer than freshly pulled beets for a salad, the greens are really good too.

    I love beets, but I have to be careful because once I start eating them I can't stop and then I am sick for days.

    Love beets! I usually roast them just with oil and s&p, maybe garlic. I'll eat them plain like that as a side. Slice up to put in salad. Sauté with some vinegar, onion and garlic to eat with the sautéed beet greens. So many good things.

    My husband and I garden every summer and we tend to stick to replenishing crops (squash, peppers, lettuce, tomatoes, etc.) but I ALWAYS reserve a spot for beets. We love them in our house...although I have to remind my husband the day after we eat them that he ate them so he doesn't think he's dying when he goes to the restroom. :laugh:
