Help - Best Measurements for Men with Health Issues

Several months ago I was diagnosed with pre-diabetes and moderately high cholesterol. 53 years old, 5'10' and fluctuating around 199 -204 lbs. I already exercised or participated in fitness or sports pretty regularly 3 - 4 days a week. Doc said that outwardly I appeared to be in good shape for my age. He suggested that I lose 5 - 7% of my body weight and come in to take tests again. This would put me in the 185 - 190 range.
So, I started tracking with MFP and ramping up my exercise. More intensity and 5 - 6 day a week. Currently, I'm fluctuating between 194 and 197 in my weight. And, my pants sizes have dropped a good bit - A bit baggy in the waist now. But, I seem to have a tough time going lower in weight. I'm a bit stronger in the gym, so I assume that I've gained some muscle and lost some fat.
Was reading that Body fat % is a much better indicator of health than weight. But, to get an accurate body fat % it's best to go to a place that has top of the line body fat equipment. Seems like doing body fat myself with calipers or using one of those home machines is an inaccurate process with fluctuating measurements.
For simplicity and accuracy, would it be best to just do a waist measurement each week at home? Other suggestions? Thanks!
