Gluten Free Vegan- tips?

I just got some blood work back, and it showed that my cholesterol is too low and I have large sensitivities to gluten, dairy, and eggs. I've been planning to try a vegan diet for months, starting on January 13th (religious reasons), so pretty soon I'll have a lot of dietary restrictions that I'm not used to. I had the tests done because I haven't been feeling like myself recently, always tired and not up to do anything, upset stomach, and just not feeling well.

My doctor said I need to eat more fats- healthy fats of course- to increase my cholesterol, and that I should avoid gluten, dairy, eggs, almonds, bananas, peanuts, and lima beans. (That's what the test showed).

Does anyone have any tips on how to live gluten free and vegan? Know of any blogs, recipes, or good gluten/vegan products? It's kind of overwhelming. I'm not so nervous about no meat, it's just dairy and wheat that I'm going to have trouble with.

Any insight would be extremely helpful and much appreciated. :)

    Also google Trisha yearwoods black bean lasagna it's vegan. Sub gluten free rice lasagna noodles can get at whole foods. Made it tonight...excellent.

    Cashew butter, sunflower butter.

    Coconut oil, grapeseed oil

    Black beans, chickpeas, etc.

    And how are you going to get protein with these allergies and being vegan

    That's a completely fair question! I barely ate any fats, at all. I've avoided anything with fat in it for the past few years, and even though it's common sense that my body needs fat, I've just come to that realization. I've had a bad relationship with food, but it's healed now. I want to find what makes me feel the best, and I'm just not there yet.

    I'm not exactly sure, that's why I'm asking for help! I was thinking a lot of beans, tofu, and things along those lines. Do you have any suggestions?

    That's a completely fair question! I barely ate any fats, at all. I've had a bad relationship with food, but it's healed now. I want to find what makes me feel the best, and I'm just not there yet.

    Vegan foods with fats:

    Olives
    Avocados
    Coconut
    Nuts
    Seeds (pumpkin, sesame, sunflower, etc)

    Sounds like your body is screaming for fats becuase it has been deprived. How about eating lots of extra virgin olive oil with your veg, and have slices of avocado with your meals? And perhaps lots of almond butter on celery and cucumber?

    Did you see a REAL medical doctor for your allergy test, or some sort of quasi specialist who purport to be an allergy expert? There's a big difference. If you are not allergic to dairy and eggs, you are missing out on some real terrific sources of natural, healthy fats.

    I did see a real medical doctor, and he was pretty adamant on giving up dairy and eggs. Thanks so much for all of the advice :D

    Nuts, Olive Oil, and Coconut Oil for fat changes.

    Eat veggies you like first. Slowly add in other veggies until you get the taste for them.

    If you got the money for it, I would go with juicing. Would be easy.

    Not sure if this will help you or not, but I'm suppose to be allergic to dairy. I drink Raw Milk and don't have a problem. It's not vegan of course.

    Just to clarify for the people who are worried about how you will get protein. It will take dedication, but there is no reason why you can't get all the protein you need.

    Protein sources:

    Tofu (comes in many forms including soy milk, soy cheese, etc.)
    Tempeh (this is a form of soy)
    Beans- all varieties (and bean sprouts!)
    Chickpeas, hummus
    Lentils (kind of similar to beans)
    Rice (including rice noodles which my friends with Celiac disease are crazy about)
    Corn (not a great source of protein, but good when you mix it with beans)
    Potatoes (again, not a great source unless you mix it with other stuff)
    Mushrooms and various vegetables (for example Broccoli has 4g of protein per cup)
    Oats and Oat flour (I'd be careful with this because I understand it could be contaminated with gluten!)
    NUTS and peanut butter (also lots of healthy fat here so spread these on various things you eat!)
    Seeds like pumpkin seeds, sunflower seeds, sesame seeds
    Nutritional Yeast (Vegans I know use it as Parmesan cheese or sprinkle it on popcorn)
    Almond Flour

    I'm a gluten free vegan. Vegan by choice.

    Does your doctor know you plan to be vegan? I'm not sure you can raise cholesterol just by eating more vegetable fats. I'm not sure you can't, either. My cholesterol is also very low, but I eat plenty of vegan fats.

    (Assuming you mean overall cholesterol is too low, not the HDL. My overall cholesterol is low, but my HDL is very high.)

    Check out alternative flours like garbanzo bean flour. When I get enough money for a good blender, I'm looking forward to trying lentil flour pancakes, with the flour made on the spot with dry red lentils and the blender. (Lentils are cheap!)

    Tofu, protein enhanced milks like almond or flax milk with pea protein, soy milk, lentils, quinoa, beans, rice, nuts and seeds, nutritional yeast, pumpkin seed protein powder smoothies.
